Dough is stretched, folded, and extended between the chef’s hands, with thickness and elasticity determined by experience and touch. Every subtle adjustment reflects an understanding of time and temperature. Here, preparation is not concealed but placed at the center of the space. Guests witness not only the making of food, but the continuity of skill and focus.
